Ingredients:

  • 1 pound large shrimp, peeled and deveined

  1. Heat the olive oil in a large skillet or deep fryer to 375 degrees F (190 degrees C).
  2. Season the shrimp with salt and pepper.
  3. Add the shrimp to the hot oil and cook for 5-7 minutes per side, or until pink and cooked through.
  4. Remove the shrimp from the oil and drain on paper towels.
  5. Add the onion, green bell pepper, and red bell pepper to the skillet and cook until tender and slightly browned.
  6. Add the cilantro and lime juice to the skillet and cook for 1 minute.
  7. Serve the shrimp over rice or noodles.

Tips:

  • For a crispier skin, double-fry the shrimp. First fry them for 3-4 minutes per side, then remove them from the oil and let them drain on paper towels before frying again for 2-3 minutes per side.
  • Serve with a dipping sauce, such as aioli, sriracha, or lemon-butter sauce.
  • Serve with a side of steamed broccoli or asparagus.
