Ingredients:

  • 1 whole chicken, cut into 8 pieces

  • 1 tablespoon of chopped fresh coriander leaves
  • 1 tablespoon of chopped fresh mint leaves
  • 1 teaspoon of black peppercorns
  • 1 teaspoon of ground black pepper
  • 1 tablespoon of tomato paste
  • 1 cup of water
  • 1 tablespoon of cornstarch
  • 1 tablespoon of chopped fresh cilantro leaves

Instructions:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  2. Season the chicken with salt and pepper.
  3. Add the chicken to the pot and cook for 10 minutes per side, or until cooked through.
  4. Remove the chicken from the pot and set aside.
  5. Add the onion, garlic, ginger, coriander, mint, black peppercorns, and ground black pepper to the pot.
  6. Add the tomato paste and water to the pot.
  7. Bring to a boil, then reduce heat to low.
  8. Add the chicken back to the pot and simmer for 15 minutes, or until the chicken is tender and the sauce has thickened.
  9. Serve over rice, with fresh cilantro leaves on top.
