Ingredients:
- 1 pound fresh clams, scrubbed and deveined
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh cilantro
Instructions:
- Heat the vegetable oil to 375 degrees F (190 degrees C).
- In a large bowl, combine the clams, vegetable oil, salt, and pepper.
- Add the cornstarch and water to the bowl and whisk until smooth.
- Add the parsley and cilantro to the bowl and toss to coat.
- Fry the clams for 5-7 minutes per side, or until cooked through and golden brown.
- Drain the clams on paper towels and serve immediately.
Tips:
- For a crispier crust, double-fry the clams. Fry them once at 375 degrees F (190 degrees C) for 5 minutes, then fry them again at 350 degrees F (175 degrees C) for 3 minutes.
- Serve with a dipping sauce, such as aioli or lemon-butter sauce.
- Garnish with fresh parsley or cilantro.
