Ingredients:

  • 1 pound fresh clams, scrubbed and deveined

  2. In a large bowl, combine the clams, vegetable oil, salt, and pepper.
  3. Add the cornstarch and water to the bowl and whisk until smooth.
  4. Add the parsley and cilantro to the bowl and toss to coat.
  5. Fry the clams for 5-7 minutes per side, or until cooked through and golden brown.
  6. Drain the clams on paper towels and serve immediately.

Tips:

  • For a crispier crust, double-fry the clams. Fry them once at 375 degrees F (190 degrees C) for 5 minutes, then fry them again at 350 degrees F (175 degrees C) for 3 minutes.
  • Serve with a dipping sauce, such as aioli or lemon-butter sauce.
  • Garnish with fresh parsley or cilantro.
