  • 1 tsp (5 ml) salt
  • 1 tsp (5 ml) dried oregano
  • 1 tsp (5 ml) dried thyme
  • 4 cups (10 L) of water

Instructions:

  1. In a large pot, combine the pork bones, onion, carrots, celery, garlic, black peppercorns, salt, oregano, and thyme.
  2. Bring to a boil, then reduce heat to low and simmer for 2 hours, or until the bones are tender and the liquid has reduced by half.
  3. Strain the soup and discard the solids.
  4. Serve hot with a side of crusty bread.

Tips:

  • For a richer soup, use a combination of different types of pork bones, such as ribs, knuckles, and marrow.
  • You can also add other vegetables to the soup, such as potatoes, peas, or green beans.
  • If you prefer a thicker soup, simmer for longer or add a little more water.
