Ingredients:
- 2 lbs (907 g) of pork bones, cut into 2-inch (5 cm) pieces
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 tsp (5 ml) black peppercorns
- 1 tsp (5 ml) salt
- 1 tsp (5 ml) dried oregano
- 1 tsp (5 ml) dried thyme
- 4 cups (10 L) of water
Instructions:
- In a large pot, combine the pork bones, onion, carrots, celery, garlic, black peppercorns, salt, oregano, and thyme.
- Bring to a boil, then reduce heat to low and simmer for 2 hours, or until the bones are tender and the liquid has reduced by half.
- Strain the soup and discard the solids.
- Serve hot with a side of crusty bread.
Tips:
- For a richer soup, use a combination of different types of pork bones, such as ribs, knuckles, and marrow.
- You can also add other vegetables to the soup, such as potatoes, peas, or green beans.
- If you prefer a thicker soup, simmer for longer or add a little more water.
