Ingredients:

  • 1 tablespoon of chopped fresh cilantro

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the yellow squash and cook until tender and golden brown, about 10 minutes.
  3. Add the chickpeas, onion, green bell pepper, and red bell pepper and cook for 5 minutes, or until tender.
  4. Add the cilantro and cook for 1 minute, or until fragrant.
  5. Add the salt, black pepper, and ground black pepper and cook for 1 minute, or until combined.
  6. Add the yellow squash to the pot and cook until heated through.
  7. Serve immediately.
