Ingredients:

  • 1/2 cup of cooked ground turkey or chicken

Instructions:

  1. Heat the vegetable oil in a large skillet or Dutch oven over medium heat.
  2. Add the onion, green bell pepper, and red bell pepper and cook until tender, about 5 minutes.
  3. Add the diced tomatoes, cream of chicken soup, corn kernels, oregano, thyme, black pepper, and salt.
  4. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the vegetables are tender and the sauce has thickened.
  5. Add the cooked ground turkey or chicken and cook until heated through.
  6. Serve hot with a side of crusty bread.

Tips:

  • For a richer flavor, use a combination of ground turkey and ground chicken.
