Ingredients:
- 1 tablespoon of vegetable oil
- 1 large onion, diced
- 1 large carrot, diced
- 1 large green bell pepper, diced
- 1 (15-ounce) can of diced tomatoes with green chilies
- 1 (15-ounce) can of diced tomatoes with black beans
- 1 (15-ounce) can of diced tomatoes with corn
- 1 (15-ounce) can of diced tomatoes with green olives
- 1 (15-ounce) can of diced tomatoes with artichoke hearts
- 1 (15-ounce) can of diced tomatoes with mushrooms
- 1 (15-ounce) can of diced tomatoes with tomatoes
- 1 tablespoon of dried oregano
- 1 teaspoon of dried basil
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper (optional)
Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium heat.
- Add the onion, carrot, and green bell pepper and cook until tender, about 5 minutes.
- Add the diced tomatoes, oregano, basil, black pepper, and cayenne pepper (if using). Simmer for 10 minutes, or until the vegetables are tender.
- Add the diced tomatoes with green olives, artichoke hearts, mushrooms, and tomatoes. Simmer for 5 minutes, or until the vegetables are tender.
- Serve over rice or noodles.
Tips:
- For a richer sauce, use a combination of different types of tomatoes.
- You can also add other vegetables, such as zucchini or bell peppers.
- Serve with a side of crusty bread or a dipping sauce, such as ranch dressing or pesto.
