Ingredients:

  • 1 tablespoon of vegetable oil
  • 1 large onion, diced
  • 1 large carrot, diced
  • 1 large green bell pepper, diced
  • 1 (15-ounce) can of diced tomatoes with green chilies
  • 1 (15-ounce) can of diced tomatoes with black beans
  • 1 (15-ounce) can of diced tomatoes with corn
  • 1 (15-ounce) can of diced tomatoes with green olives
  • 1 (15-ounce) can of diced tomatoes with artichoke hearts
  • 1 (15-ounce) can of diced tomatoes with mushrooms
  • 1 (15-ounce) can of diced tomatoes with tomatoes
  • 1 tablespoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional)

Instructions:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the onion, carrot, and green bell pepper and cook until tender, about 5 minutes.
  3. Add the diced tomatoes, oregano, basil, black pepper, and cayenne pepper (if using). Simmer for 10 minutes, or until the vegetables are tender.
  4. Add the diced tomatoes with green olives, artichoke hearts, mushrooms, and tomatoes. Simmer for 5 minutes, or until the vegetables are tender.
  5. Serve over rice or noodles.

Tips:

  • For a richer sauce, use a combination of different types of tomatoes.
  • You can also add other vegetables, such as zucchini or bell peppers.
  • Serve with a side of crusty bread or a dipping sauce, such as ranch dressing or pesto.
