Ingredients:

  • 1 tablespoon of chopped green onions
  • 1 tablespoon of chopped chili peppers (optional)

Instructions:

  1. Rinse the peas thoroughly and soak them in water for at least 30 minutes.
  2. Drain the peas and rinse them again.
  3. In a large pot or Dutch oven, heat the vegetable oil over medium heat.
  4. Add the drained peas and cook for 10-15 minutes, or until tender and just cooked through.
  5. Add the salt, black pepper, ground black pepper, onion, carrots, celery, cilantro, lime juice, green onions, and chili peppers (if using).
  6. Simmer for 5 minutes, or until the vegetables are tender and the flavors have blended.
  7. Serve hot with a side of lime wedges.

Tips:
